Caviar with mushrooms and vegetables would be a nice addition to a Lenten lunch. Good for spreading on bread. Can be added directly to a meal, such as buckwheat porridge. Very tasty, filling and healthy. Quick and easy to make with normal products.

Ingredients for caviar with vegetables, mushrooms and nuts:


  • Champignons - 200 g
  • Carrots - 1 pc
  • Onion - 1 pc
  • Walnuts - 40 g
  • Vegetable oil - 5 tablespoon
  • Soy sauce - 2 tablespoon
  • Black pepper (ground to taste)
  • Greens (dill, basil) - 2 sprigs.
  • Breads ("Generous", Special 5 cereals with flax seeds) - 1 unit.

How to cook caviar with vegetables, mushrooms and nuts step by step with photos


Chop onion finely and fry in oil until transparent.

Add finely grated carrots and braise until soft.

Wash the mushrooms and cut into 4 pieces if you have fresh ones. I had frozen mushrooms already cut into strips.

Put the mushrooms on a baking tray, lightly greased with oil. Place in an oven preheated to 180 degrees for 25-30 minutes.

When the time is up, take the mushrooms out.

Place them on a plate and let them cool.

Chop the nuts.

Pass mushrooms and vegetables through a meat grinder with a coarse grater.

Add walnuts to the chopped mushrooms and vegetables.

Add soy sauce and the oil that was used to roast the vegetables to the caviar. Season with pepper.

Stir the mixture and serve as a snack or as an accompaniment to a hot meal, spread on a bread.
