Ingredients for eggplant with mushrooms:


  • Eggplant - 1 pc
  • Mushrooms (large cap mushrooms) - 9 pcs
  • Onions - 1 pc
  • Garlic - 3 clove
  • Thyme - 6 sprigs.
  • Butter (in hats, if substituted with vegetable oil, it would be a vegetarian dish) - 50 g
  • Olive oil (for frying) - 4 tablespoon
  • Wheat flour / Flour - 1 tablespoon
  • Salt
  • Pepper Mix

How to cook eggplants and mushrooms step by step with photos


Products

Wash the mushrooms, remove the shanks and cap them with a bit of butter, season with salt and place in an oven preheated to 200°C for 20 minutes.

Finely chop onion and mushroom stalks and fry in olive oil for about 10 minutes.

Cut eggplant into slices, roll in flour and salt and fry on both sides. Set aside 9 eggplant slices and chop up the rest.

Finely chop garlic and thyme leaves.

Mix sliced eggplant, garlic and thyme and onion and stalks in a bowl. Season with salt and pepper.

Layer everything on a plate and garnish with cherry tomatoes...
