Dear Friends of Povarenka! We're in Lent, so I suggest fasting people and non-fasting people alike to cook mushrooms stuffed with soy-cheese curd vegetables and baked in the oven. Although this is a fasting dish, it would make a wonderful addition to a holiday meal. If you are not fasting, feel free to substitute the soybean curd with regular cottage cheese.

Ingredients for mushrooms stuffed with vegetables and baked in the oven:


  • Mushrooms (mushrooms) - 12 pcs
  • Cheese (soy or Tofu cheese) - 200 g
  • Sweet yellow pepper - 1 pc
  • Sweet red pepper - 1 pc
  • Ginger (root) - 100 g
  • Onion (red) - 1 pc
  • Tomato - 1 pc
  • Vegetable oil - 100 ml
  • Salt (Extra) - 2 teaspoon
  • Sugar - 1 teaspoon
  • Garlic - 5 clove

How to cook mushrooms stuffed with vegetables and baked in the oven step by step with photos


Wash the mushrooms. Remove the stalk. P.S.Large caps of mushrooms (D min. 7 cm).

Cut peppers into small cubes.

Peel the tomatoes from their skins. Finely chop tomato and onion.

Grate ginger root on a medium slicer.

Make dressing for mushrooms. Finely chop the mushroom stalks. Fry onion, mushroom stalks and bell bell pepper for 5 minutes over medium heat in 70 ml of oil. Add tomato, ginger, salt and sugar. Sauté over medium heat for 3 minutes. Add crushed garlic. Remove from heat.

Add soy-cheese curd to stew. Grease mushrooms and casserole dish with butter. Fill the caps with stuffing. Bake for 15 minutes at 200° C. P.S.Spoon out the stuffing as much as possible since you put it in a pile. к. The soy curd does not expand in size like regular curds when heated.

Baked mushrooms and vegetables are ready.
