Ingredients for herring with mushrooms:


  • Herring (lightly salted, 3 big fat ones) - 1 kg
  • Onions - 1 kg
  • Mushrooms (dried) - 30 g
  • Cucumber (canned, small) - 1 pc
  • Sprats (smoked, 2-3 large fish) - 40 g
  • Tomato paste (good quality) - 250 g
  • Vegetable oil (for frying)

How to cook herring with mushrooms step by step with photos


Prepare the necessary products. Wash the mushrooms and soak them in warm water for a few hours, even overnight. Then boil and drain them. Peel the onions.

Now the work that you usually do not like too much, but in this case you can't do without it. Cut the heads and tails off the herrings, gut them and rinse under running water.

Make a longitudinal cut along the backbone and in the bottom of the belly and, starting from the tail, carefully remove the skin.

Separate the top fillet with your fingers.

Then, again starting from the tail, separate the backbone along with the rib bones.

Now it is urgent to pour a shot and refresh yourself, because now comes the most tedious and most difficult: we must take out all the small bones and do it as carefully as possible.

Cut the cleaned herring into strips.

Cut the onions in thin slices, not too thin.

Fry the onions in oil until soft and golden. Let cool.

Add sprats, sliced cucumbers and boiled mushrooms.

Thoroughly chop all ingredients in a blender.

Add the herring.

Gently mix and at the end add tomato paste. Actually it should have been added before the herring, but I forgot. Stir everything once more.

Tightly put in glass jars, close and store in the refrigerator. Serve in 2-3 days, when the herring has been soaked in the sauce. If you do not have a mixer, you can chop all the ingredients very finely and grind well with the tomato paste. Or mince with a meat grinder. You can prepare a large amount in advance and store it in the fridge. Makes it taste even better!
