You can make these mushrooms first and then serve the rest of the meal - while the rest of the meal is being served, the mushrooms . There is no danger here, because mushrooms are often eaten raw, and in this recipe they salt and turn from crispy to nice-crispy-soft, combined with onions, garlic and dill, making a great appetizer. In this recipe I used portabello baby mushrooms, which are a type of brown mushrooms, but you can also use plain white mushrooms

Ingredients for instant pickled mushrooms:


  • Champignons (medium sized - you can use baby portabello or plain mushrooms) - 4 pcs
  • Dill - 3 sprigs.
  • Garlic - 1 clove
  • Onions - 1/8 piece
  • Salt (coarse sea kosher salt makes better contact with the mushrooms, although you can use any salt) - 2 teaspoon
  • Sugar - 1/2 teaspoon
  • Lemon juice - 2 teaspoon
  • Vegetable oil - 1 tablespoon

How to cook instant pickled mushrooms step by step with photos


Slice mushrooms thinly (2 to 3 mm) so they get salted quickly. First cut in half, and then, each half into slices.

Slice the dill medium. To enhance the flavor of dill, you can grate it with the flat side of the knife with salt and garlic (then it will run juice faster), but I did not do this, because I like it when dill is whole in the mushrooms

Chop the onions quite finely

Put chopped mushrooms in a bowl, sprinkle with salt and mix gently with your fingertips. It is important not to add too much salt, but not too little - the mushrooms should start to sap. So taste and adjust if necessary. Then we add dill, garlic and onion to the bowl, add sugar and lemon juice, pour the oil (it will absorb the aromas of dill, onion and garlic and transfer them to the mushrooms), and stir again. Let stand for 10-15 minutes.

Serve as an appetizer with other dishes or on its own.
