Here's an original breakfast variation. Borrowed it from a favorite Australian eatery. It's a great combination of mushrooms and asparagus, and you can't beat the traditional scrambled eggs and toast!?

Ingredients for Kangaroo's favorite breakfast:

  • Champignons (or shimigi or mix) - 6 pcs
  • Asparagus - 6 units
  • Chicken egg - 2 pcs
  • Shallots - 5 pcs
  • Garlic (small) - 1 clove
  • Sour cream - 1 tablespoon
  • Parsley (fresh, to taste)
  • Oregano (fresh or dried, to taste)

How to cook kangaroo's favorite breakfast step by step with photos

I suggest you dilute the mushrooms with shimigi mushrooms.

Saute the mushrooms in oil, salt and pepper to taste. While they are frying we have 7 minutes to wash the asparagus and break it in the right place (with the fingers of one hand we grab the middle and with the fingers of the other hand the base and bend it where it is broken :)) Boil it in water for 5 minutes. Add onions, garlic and parsley, stir and cook for another 7 minutes, drizzle with lemon juice and set aside. When cooled, add the sour cream and stir. More salt, if necessary. Put the asparagus in a colander and season with salt and pepper, sprinkle with lemon juice so it does not lose its color and roast for a minute on each side.

Fry the toast and cook the eggs over low heat so that the edges do not stick; add a little water in addition to oil to the pan.
