This recipe is dedicated to raw mushroom lovers. When I was expecting a baby I was given a book "Cebiches del Peru". A magical, stunningly colorful publication with lots of pictures of Peru and ceviche, with recipes that you just want to put to use, but... my doctor has forbidden me to eat fish that hasn't been cooked. And the only recipe from that book that I was allowed to eat was mushroom ceviche. Now I understand why they say "all in good time"I might not have chosen this recipe under different circumstances. And now I know that mushroom ceviche is the right thing to have when you can't have raw fish but want ceviche! Try it!

Ingredients for mushroom ceviche:

  • Champignons (fresh) - 500 g
  • Olive oil - 2 tablespoon
  • Lemon juice - 1/4 glass
  • Garlic - 2 clove
  • Hot red pepper (fresh)
  • Parsley (herbs)
  • Coriander (herbs)
  • Ginger (root) - 1/2 tablespoon
  • Onions - 1 pc
  • Salt
  • Black pepper (ground)

How to cook mushroom ceviche step by step with photos

Squeeze out the lemon juice. I mixed lemon and lime. The recipe only calls for a quarter cup of juice, so I used half a cup.

♪ Chop up some fresh hot peppers ♪. Red, green, whatever you can find. Amount to taste.

Peel and finely chop the ginger.

Chop parsley greens and coriander. To taste as well.

Slice the onion into chopper rings. Red ones look prettier.

Crush garlic in a mortar.

Mix dressing of lemon juice, salt, pepper, olive oil, garlic and ginger. I used a little more oil than was suggested in the recipe because I also used more lemon juice.

Peel and slice the raw mushrooms.

Put mushrooms in a dish, pour the dressing and sprinkle with chopped greens and onion. Let to stand for 20-25 minutes. Serve chilled.
