Ever since I first tried mushrooms in their raw state, I don't even want to eat them in any other form but fresh. There are lots of great recipes for stewed and baked stuffed mushrooms on this site. I present you fresh, crispy mushrooms with a flavorful goat cheese filling. Not a gram of extra fat, the perfect cold appetizer for sophisticated gourmets. I dedicate this dish to my favorite filmmaker, the great hoaxer of our time, Tim Burton! I look forward to the release of his "Alice in Wonderland"...

Ingredients for stuffed mushrooms "the looking glass":


  • Mushrooms (fresh, about 10 large ones) - 250 g
  • goat cheese (soft) - 100 g
  • Tomato (medium) - 1 pc
  • Red onion (small onion) - 1 pc
  • Ham (smoked, or ham) - 50 g
  • Parsley - 1 bunch.
  • Black pepper - 1/2 teaspoon
  • Capers (As many as mushrooms)

Rinse mushrooms thoroughly and remove stalks (do not throw them away). Leave to dry a little, so that there is no excess water in the caps.

Note: It is desirable to cut off the inner rim of each mushroom, making "cup" deeper, so you can see the mushroom plates (in the photo on the left).

Preparing the stuffing. For this, we need soft goat cheese, smoked ham, tomato, onion, black pepper and everything we cleaned from the mushrooms: shanks and rims. The tomato needs to be peeled.

Mince the ingredients listed as much as possible (with a grater, blender or simply a knife) and mix thoroughly. Do not salt.

Stuff the mushrooms with the obtained mixture.

Very finely chop parsley and make a rim of it around the stuffing in front of each mushroom.

Put a caper on top of it. Our appetizer is ready. To the table!
