This recipe was my mom's invention. Once upon a time (I was a cad), we lived in the north, above the Arctic Circle. And then one day my dad's mom came to visit us :). And during the Lent, which she observed. What in the north to treat mother-in-law, who does not eat meat? You can't find fruits and vegetables there! But we picked and pickled mushrooms ourselves. So my mother came up with a dish from improvised means, lean, not troublesome to cook and very delicious. Grandma was delighted :).

Ingredients for mushrooms and tomatoes:

  • Champignons (pickled ) - 200 g
  • Mushrooms (royal mushrooms, fresh ) - 300 g
  • Tomatoes in own juice - 660 g
  • cherry tomatoes (pickled) - 200 g
  • Onions (one large onion) - 200 g
  • Vegetable oil (in our story, the oil, of course, "Oleina") - 150 ml

How to cook mushrooms and tomatoes step by step with photos

So, here are the ingredients. I think you can use other wild mushrooms instead of mushrooms. In the original recipe there were all kinds of Podoberezovik-Sauerozhniki, pickled by hand, and tomatoes in their own juice. We don't have that luxury, so I added fresh (royal, brown) mushrooms and some pickled cherry tomatoes to the pickled mushrooms. If you want a more diet version, you can skip the pickled cherries. Although I ended up with not too spicy, but just right (considering my dislike of spicy food). You can take even more onions if you want, they will not be superfluous.

Clean the fresh mushrooms with a damp cloth, cut off the stains with a knife, chop them up finely, and put them in a deep pan or a roaster.

Peel and wash the onions, coarsely chop them and add them to the mushrooms.

Add all the remaining ingredients and add oil.

Put the pan on heat, cover and bring to the boil. Reduce the heat and simmer under a lid for 20 minutes at a gentle simmer. Turn it off and let it simmer for a while.

So, actually time of active cooking was required for cleaning and cutting of onions and mushrooms, opening of jars (10 minutes). After 20 minutes on the stove the mushrooms are ready. You can serve with potatoes or porridge, hot or cold. Bon appetit, fasting in good health and with pleasure :).
