Ingredients for kokot with mushrooms the old Russian way:


  • Champignons - 300 g
  • Oyster mushrooms - 300 g
  • Mushrooms - (Ideally, white mushrooms) - 300 g
  • White onion (large) - 1 pc
  • Hollandaise cheese - 150 g
  • Milk - 700 ml
  • Butter - 50 g
  • Wheat flour / Flour (pasadena) - 1.5 tablespoon
  • Breadcrumbs / Breadcrumbs - 1.5 tablespoon
  • Vegetable oil - 5 tablespoon
  • Nutmeg (a small pinch) - 0.1 teaspoon
  • Thyme - 0.1 teaspoon
  • Black pepper (ground) - 0.1 teaspoon
  • Salt - 1 teaspoon

How to cook kokot with mushrooms old Russian style step by step with photos


Process champignons, oyster mushrooms and butter mushrooms (or white), cut into slices.

Fry them in vegetable oil on high heat without cover until they lightly brown, add the onion chopped into quarter rings and thyme, until the onion lightly caramelizes.

Melt butter in a saucepan over low heat.

Add lightly browned (until slightly brown on a dry skillet) the flour, stirring thoroughly to dissolve it so that there are no lumps.

Pour in a thin stream, stirring all the time, milk, and cook, stirring again, until it slightly thickens. It is very convenient to stir with a whisk, all the lumps disperse. Remove from heat, add salt, pepper and nutmeg, stir.

Grate cheese on a grater, mix with breadcrumbs.

Spread the mushrooms and onion into the containers you bake the cakes in.

Pour milk sauce on them.

Sprinkle with cheese and breadcrumbs and bake in preheated 190 degrees oven until lightly browned.

Take out of the oven, sprinkle with green onions and lettuce leaves and eat! Enjoy!!
