This great recipe was given to me by my coworker's mom when we were celebrating her thesis defense. It's a very easy recipe to make, especially when you want to surprise your guests and save money.

Ingredients for pickled mushrooms:

  • Mushrooms - 1 kg
  • Carrots (large) - 1 pc
  • Onions (large) - 1 pc
  • Salt - 2 teaspoon
  • Sugar - 4 tablespoon
  • Vinegar - 4 tablespoon
  • Coriander (You can substitute any mushroom seasoning. I like it better with coriander!) - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Garlic - 1 pc
  • Sunflower oil - 100 g

How to cook pickled mushrooms step by step with photos

Cut the onion in rings; if the onion is too big, it can be cut in half rings.

Grate carrots with a drum slicer, but I use a regular slicer since I don't have one.

Pour boiling water over the carrots and onions and let them marinate for 20 minutes.

While they marinate, boil the mushrooms (about 5-7 minutes from boiling). For pickled mushrooms to be beautiful, it is better to buy small, but if you do not have this option, just cut them into 4 equal pieces. After boiling, drain the mushrooms and pour them into a container where they will marinate.

Fry the sunflower oil (bring to the boil).

Pour pepper, salt, sugar, garlic and vinegar into the mushrooms, then add carrots and onions and pour boiling oil. Mix everything, put under a light weight in the refrigerator, in 24 hours it's ready. Bon appetit)))
