Ingredients for a spicy appetizer of eggplant and mushrooms:

  • Eggplant - 350 g
  • Slices of mushrooms - 350 g
  • Onions - 1 pc
  • Garlic (chop very finely) - 3 clove
  • Soy sauce (plus 1 tsp.) - 2 tablespoon
  • Vegetable oil (plus for frying) - 2 tablespoon
  • Salt - to taste
  • Chili pepper - to taste
  • Greens - to taste
  • Balsamic - 1 teaspoon
  • Sugar - 1 teaspoon
  • Bay leaf - 1 pc
  • Mushrooms (dried, powdered - I grind dried mushrooms into powder) - to taste

How to cook spicy eggplant and mushrooms step by step with photos

Cut eggplants into thin slices - not too thinly. Whisk 2 tablespoon soy sauce and 2 tablespoon vegetable oil (just do it in a jar with a twist-off lid). Dip eggplant in marinade, stack on top of each other and let marinate for an hour.

Drain and fry the eggplants on both sides in oil, arrange them in a single layer in a baking dish and pour the garlic over them. Cover with a lid.

Peel and wash the mushrooms, boil them well, then strain into a colander to drain them. Fry the mushrooms in the oil with the bay leaf, sprinkle with mushroom powder, season with salt and pepper to taste, add the chilli flakes to taste. Place on the eggplants in a single layer.

Cut the onion into half rings, sprinkle with sugar, drizzle with balsamico and lightly rub in. Saute with a teaspoon of soy sauce - tweak to your liking - onions are sweet and sour.

Sprinkle onions over mushrooms, sprinkle with herbs and let stand for a couple of hours.
