Ingredients for Spicy Snack "golden mushroom":

  • Millet (TM "Mistral" golden millet cooked in advance) - 1 glass
  • Carrots (large) - 1 pc
  • Water - 100 ml
  • Sugar - 1 teaspoon
  • Salt (a little less can be used) - 0.5 teaspoon
  • Vegetable oil - 4 tablespoon
  • Garlic - 1 clove
  • Black pepper - to taste
  • Sweet paprika - to taste
  • Champignons - 4 pcs
  • Lemon juice - to taste
  • Mustard (a little less than a quarter tsp.l.) - to taste
  • Spinach (for decoration) - 0.5 bunch.
  • Dill (for decoration) - to taste

How to cook spicy appetizer "golden mushroom" step by step with photos

I boil golden millet TM "Mistral". I need 1 cup of cooked millet.

Grate large carrots on a grater for Korean carrots or cut into thin strips.

Prepare the marinade for carrots: dissolve 1 teaspoon of sugar in 100 ml of water, 0.5 teaspoon of salt (you can do it a little less), add 1 tablespoon of vegetable oil, a fine minced garlic clove, ground hot black pepper and paprika powder to taste. Stir everything thoroughly, then bring to a boil over medium heat.

I pour the carrots in the prepared hot marinade, stir and let stand for about 20-30 minutes.

Now do mushrooms. I'm going to bake them, so I chose mushrooms with the cap closed, so they stay juicier than if you choose mushrooms with a completely open cap.

For the marinade for mushrooms, add 3 tablespoon of vegetable oil to the washed and dried mushrooms, add a little salt, ground hot black pepper, lemon juice and a little less than a quarter of a teaspoon of mustard. Stir thoroughly and let stand for 20 minutes. Then in preheated to 180 degrees I send bake mushrooms about 20-30 minutes, periodically stirring them for even browning.

Now it is only necessary to serve beautifully. For décor I use spinach leaves and dill. On spinach first layer I lay with a salad mold cooked millet, then a layer of pickled carrots (pre-drain marinade in a separate container). Once the carrot layer is placed, add a little marinade on top of it, so that it seeps onto the bottom layer of millet (it is important not to overdo it, otherwise the millet will not hold its shape). On top I put baked mushrooms and small sprigs of dill. Snack "Golden mushroom" ready to go! Enjoy!!!!
