For the marinade

  • Champignons - 10 pcs
  • Water - 500 ml
  • Sugar - 1 tablespoon
  • Salt - 1 tablespoon
  • Allspice - 3 pcs
  • Cloves - 2 pcs
  • Bay leaf - 1 pc
  • Vinegar (9%) - 50 ml

For the filling

  • Cheese curd (Hochland cream cheese) - 100 g
  • Dill (chopped) - 1 tablepoon
  • Pickled cucumber (small) - 1 pc
  • Cayenne pepper (or red hot) - 0.25 teaspoon
  • Garlic - 1 clove


  • Lettuce leaves / Salad (to serve)

How to cook spicy mushroom appetizer step by step with photos

Boil the marinade on the stove. Pour water, add sugar and salt, stir. Add the allspice, cloves, bay leaf, bring to the boil and add the mushrooms. Before we put them in the marinade, peel the mushrooms and remove the stalk. Boil them for 5 minutes and pour in vinegar. Bring back to boil and remove from heat. For appetizers, it is better to take mushrooms of a size you can easily swallow. Leave them in the marinade until it cools. With a slotted skimmer we put them on a paper towel to soak them.

Make the filling. Put Hochland cream cottage cheese in a bowl. Add chopped dill, garlic, finely chopped hot cucumber, cayenne pepper (red hot pepper), combine everything carefully. I put lettuce leaves and stuffed pickled mushrooms on the plate for serving. Fill the mushrooms tightly with a teaspoon. I put on top another thinly sliced cucumber slice, which I had from the stuffing.

Serve. Good snack with strong drinks (to vodka).
