Cooked Mushroom and Spinach Appetizer

This appetizer can be made with fresh mushrooms, frozen or even dried! The author's version of cooking and photos will be in the text. In this recipe I used frozen mushrooms. Greens can be taken to taste, in the original version rosehip leaves were suggested. The first preparation in the summer was with them, later I began to add chopped parsley, and in this recipe cooking with spinach. Any of the suggested greens will enrich the mushroom appetizer very well!

Ingredients for an appetizer of mushrooms with spinach:


  • Mushrooms (here boiled from frozen) - 200 g
  • Spinach (or any greens, in summer - rosehip leaves - 2 tablespoon) - 2 tablespoon
  • Sour cream - 2 tablespoon
  • Chicken egg - 1 pc
  • Vegetable oil (1-2 tablespoon) - 1 tablespoon
  • Salt - to taste

This recipe is taken from a book by O. Shuvalova's book on rose hips. So the addition was made of rosehip leaves, which are as valuable as the fruit! In the season I cooked according to this recipe from fresh mushrooms with the addition of rosehip leaves. To adapt the recipe to the winter season, let's prepare a snack of frozen wild mushrooms with the addition of spinach. Defrost the mushrooms. I took 200 grams, they are already cooked. Rinse them in a sieve or colander to remove excess liquid. Add the mushrooms to a frying pan, add 1 to 2 tablespoons of oil, heat over low heat for 5 to 7 minutes.

In the meantime wash spinach leaves, dry them and chop with a knife. We will need 2-3 tbsp. tablespoons of herbs.

Add an egg to the mushrooms and then 2 tablespoons of sour cream.

Then add shredded herbs, salt to taste, stir, and after a minute, remove from the heat! If you wish, you can add ground black pepper.

The appetizer is ready, we put it out of the pan and serve!
