  • Squid (peeled) - 300 g
  • Mushrooms (beech mushrooms, champignons) - 200 g
  • Soy sauce (from "Kikkoman") - 50 ml
  • Vegetable oil - 4 tablespoon
  • Sesame oil - 1 tablespoon
  • Red hot pepper - 1 pc
  • Ginger ((root) grated) - 1 tablepoon
  • Garlic - 2 clove
  • Green onions - 1 bunch.
  • Sugar - 1 teaspoon
  • Salt
  • Sherry - 1 tablespoon
  • Seasoning ("Chinese spice mix") - 1 teaspoon

Peel squid. Pat dry with paper towel. We need squid without .

Slice into thin strips.

Grate thin green onion, grate ginger root, finely chop garlic and red hot pepper. The amount of ingredients depends on your tastes.

For frying it is better to use a wok or frying pan with a thick bottom. Fry the squid in the oil and sesame oil for about 2 minutes. Place the squid on a plate.

Add calamari to the fried mushrooms and pour the soy sauce over them.

Add sugar, salt, sherry and seasoning "Chinese spice mix". I don't use salt when I use soy sauce. Any dry white wine can be substituted for the sherry. Chinese spice mix includes: aniseed, Sichuan pepper, fennel seeds, cloves, and cinnamon. Sichuan pepper has a very peculiar flavor, it can be replaced with white pepper, although it is not equal.

Stir the calamari with the mushrooms and seasonings and simmer with the lid open on high heat for one minute.
