May is not the mushrooming month, but there are already strings in Moscow region. This mushroom is conditionally edible and requires some special preparation. The taste and aroma of strokov are inimitable! (I am talking about shavings. Morels can be cooked at once.)

  • Mushrooms (stitches ) - 150 g
  • Onion (small ) - 1 pc
  • vegetable oil (for frying) - 1 teaspoon
  • Sour cream - 1 teaspoon
  • Wheat flour / Flour - 1/2 teaspoon
  • Salt
  • Black pepper
  • Mashed potatoes - 200 g

Stitches - mushrooms are very messy. They pick up sand, clay, birch seeds, etc. There could be slugs and something like a centipede inside. First remove the stalks with a knife.

Put the mushrooms in a big pot and pour cold water over them. Put at least 3 liters of water per 1kg of mushrooms. Bring them to the boil, take off the lid and simmer for 15 minutes. Part of the garbage will settle to the bottom, another part will float (remove with a spoon). Pour everything into the sink and rinse each mushroom under running cold water, separating and opening it with your fingers.

While cooking, the mushrooms shrink a lot in size. Out of 1.5 kilograms of fresh mushrooms only 400-500 grams remain. Repeat the boiling three times. The total boiling time is at least 30-35 minutes. After the second boiling time, you can slice them or cut into 3-4 cm big pieces with your hands. Boiled and cleaned of debris, we discard the mushrooms on a sieve, discuss. If you get more than you need today or tomorrow, you can freeze them.

Fry onion lightly and put the mushrooms. Add salt, five-pepper mixture, and a dash of flour. Cook, stirring, for about 5 minutes.

The final touch is the sour cream. Also very little. In the photo, 2 teaspoon. That's.. "too much"- Its sour milk flavor suppresses the absolutely unique flavor of mushrooms! Under the lid, simmer for another 10 minutes on low heat.

The mushroom appetizer is ready. You can serve it like this, hot or chilled. With slices of white bread. In my opinion - quite a self-sufficient dish.

Or you can use it as a topping. Like a potato casserole "for a quickie". Baked in the oven for 8 minutes at maximum.

At first glance, boiling mushrooms three times, such a long preliminary preparation takes a lot of effort and time. But it only seems that way. Everything comes out pretty easy, in between. And - the main thing! - The effort is justified: the taste and aroma of shavings can't be compared with anything else! And a walk through the forest in May -... Photos made on May 6 and 11.
