Wild Mushroom Pudding

Honestly, dessert puddings are not my favorite. And I've never made unsweetened pudding before. So I approached the preparation of this dish with caution. Fortunately, it turned out very delicious! The basis of the recipe is from the book "I do not eat anyone", so old that all products there are measured in pounds. I offer you my interpretation.

Ingredients for Pudding with Wild Mushrooms:


  • Mushrooms (dried) - 50 g
  • Bread (standard "brick") - 1/3 piece
  • Soy sauce (from Kikkoman) - 4 tablespoon
  • Chicken egg (separate egg yolks from egg whites) - 3 pcs
  • Butter (melt) - 1 tablespoon
  • Quail egg (boiled) - 12 pcs
  • Sunflower oil - 1 teaspoon
  • Breadcrumbs / Breadcrumbs - 1 tablespoon

How to cook pudding with wild mushrooms step by step with photos


Rinse the mushrooms a few times and soak them in two liters of cold water. Boil them for 30 minutes, then remove the mushrooms and strain the broth. Finely chop the mushrooms or use a blender. You should have mushrooms in pieces of different sizes.

Cut the crusts off the bread and cut it into cubes. Pour 1/2 cup of the mushroom broth over the breadcrumbs and add Kikkoman soy sauce. Let stand for 5 minutes, then give it a good stir with a spatula.

Whites must be beaten into a stiff foam.

Beat egg yolks with a flat beater and melted butter, then add the bread mixture.

Add the chopped mushrooms.

Gently fold in the whites.

Grease a 22*11 cm glass dish with sunflower oil and sprinkle with breadcrumbs. Spread half of the pudding mixture. Top it with the hard-boiled and peeled quail eggs.

Then the rest of the pudding mixture.

Bake at 180 degrees. My oven isn't the hottest, so I needed 50 minutes. It could be faster or longer in yours. The finished pudding is slightly moist inside and pretty dense when pressed.

The pudding should be taken out of the mold and sliced when fully cooled and refrigerated. So that's how it is "egg-eyed")))
