Wild Rice Stuffed Mushrooms

Another secret of wild rice is that its light, nutty flavor goes surprisingly well with mushrooms. In this dish, it becomes the perfect accompaniment to mushrooms, which have their own flavor that is not too pronounced.

Ingredients for mushrooms stuffed with wild rice:

  • Champignons (large) - 4 pcs
  • wild rice (or a mixture of wild and steamed rice) - 50 g
  • Brisket - 20 g
  • Leeks (white and/or shallot) - 1 pc
  • Rosemary (+ thyme/marjoram if desired) - 1 handful.
  • Garlic - 1 clove
  • Basil - 1 handful.
  • Parmesan (grated) - 20 g
  • Olive oil - 1 tablepoon
  • White dry wine (optional) - 20 g
  • Salt (and pepper to taste)

How to cook mushrooms stuffed with wild rice step by step with photos

Prepare the products. Boil the rice according to package directions and leave to cool.

Peel the mushrooms, cut out and set aside the stalks and prepare the caps for stuffing. Chop the onion and garlic. Finely chop bacon and shank of mushrooms. Grate cheese. Chop basil and rosemary herbs.

Drizzle mushroom caps with olive oil, sprinkle with salt and pepper and put in the oven to bake on the grill for 5 minutes.

Meanwhile, in a frying pan over high heat, fry the brisket until browned. Remove from the pan.

Fry onion, garlic and mushrooms in the melted fat.

Return the brisket to the pan, add the basil and rosemary herbs, salt and pepper. If desired, add wine and boil it off. Turn off the heat, stir and allow to cool slightly.

Mix the rice with the contents of the pan and the Parmesan.

Take the mushrooms out of the oven, pour the mixture over them, sprinkle with Parmesan, drizzle with butter and leave in the oven for 5 minutes more.

Serve, garnished with basil leaves. This is a nice, light, healthy and delicious snack, or lunch, or breakfast, or just a snack - you decide :)
