Ingredients for the avocado and trout sandwiches:


Fish

  • Trout - 350 g
  • Soy sauce - 40 ml
  • Olive oil (for frying) - 1 tablespoon

Mousse

  • Avocado - 1 pc
  • Sour cream - 1 tablespoon
  • Garlic - 1 clove
  • Lemon (juice) - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Baguette (to serve) - 1/2 Piece

How to cook avocado and trout sandwiches step by step with photos


First we have to remove the skin and bones. Be careful not to damage the texture.

Now put our fish in a marinade dish and pour the soy sauce over it. I used naturally brewed sauce Kikkoman. Everyone knows that trout is a delicious fish on its own, but the soy sauce only enhances its taste. No more spices are needed! Put the fish in the refrigerator overnight.

In the morning, fry the fish. In a well heated frying pan with olive oil fry until brown, about 10 minutes. Let me tell you, this is jewelry work. The fish should not be soggy and should not fall apart. When it is done we put it on a paper towel to cool it.

When it is cooled down we cut it into pieces with a sharp knife. The main thing is not to taste the fish, otherwise we won't get to sandwiches, it's too delicious!

Make mousse. Remove avocado pips and skin. Slice it into pieces and put it in the food processor. Then pour lemon over it and whizz it in the processor. Now add sour cream, garlic, salt, olive oil. Whisk until smooth. As I said before, I really like the combination of fish and sour avocado. If you do not like sourness, then a splash of lemon over the avocado, just a teaspoon will do.

Slice the baguette. For those who like it, it can be toasted in the oven or in a frying pan. I didn't do that.

Now all that's left is to spread the mousse on the baguette and garnish with the trout. I also used parsley to decorate.
