Tartine is an open French sandwich, a little bigger than our sandwich. Tartine has its origins in the Middle Ages, when the peasant's coarse stale bread was used as a plate by the poor, first eating the contents, and then a slice of bread, soaked in the food. The filling of a tartine can be completely different at the discretion of the French hostess.

Ingredients for tartine with vegetables and beef:

  • Bread - 2 slices.
  • Eggplant - 100 g
  • Tomato - 0,5 pcs
  • Pickled cucumber - 1 Piece
  • Garlic - 1 clove
  • Beef (or beef ham) - 2 slices.
  • Black olives (to taste)
  • green onions (to taste)
  • Red Onion (to taste)
  • Olive oil (for frying)

How to cook beef and vegetables tartine step by step with photos

Fry thin slices of beef (I have a salted sous-vide) or ham in olive oil until lightly browned;

Shred the vegetables and fry in olive oil until the eggplant is soft (you can put more salt in it. I did not put salt in the cucumber, which has enough salt);

Toast the slices of bread in a toaster;

Place the vegetables and red onion rings on the bread;

Add beef, olives and sprinkle with green onions;

Serve as an appetizer or with tea/coffee!
