Ingredients for a breakfast sandwich on bread:

For scrambled eggs

  • Eggs - 2 pcs
  • Olive oil (or sunflower) - 0.5 tablespoon
  • Salt (to taste)
  • Zucchini - 2 slices.
  • Red onion - 1 slice.
  • Green peas - 3 teaspoon
  • Black pepper (optional, to taste)

For the cheese

  • Cheese curds - 2 tablespoon
  • Dill (chopped) - 1 teaspoon

For serving

  • Breads (Borodino "Generous") - 2 pcs
  • Green onions (feather) - 1 pc

How to cook a breakfast sandwich on bread step by step with photos

A couple of slices of zucchini and red onion chop very finely. Drain liquid from peas. Put 2 eggs in a bowl with salt and mix. Heat a frying pan (I have a D-24 cm pan), pour oil in it and spread it all over the pan. Pour in the eggs. Once the omelet starts to set, sprinkle the top with chopped zucchini and onions, add green peas. This is my set of vegetables. You can use any other veggies you like. Not crucial. Taste and season with pepper if you like!

Once the omelet has set well, check with a spatula and begin to roll up from the edge. To make it easy to fry the omelet until tender, we cut it in two parts right in the pan. Do it carefully, without damaging the pan. Fry it until it has a nice brown crust, turning it a couple of times from one side to the other.

Add chopped dill or whatever else you like to the cottage cheese. Stir. For the sandwiches I will use Borodin breads "Generous".

Generously spread cheese and greens on the bread and place an omelet roll on top. One half for each loaf. I ended up with roll halves just the length of the bread.

Serve. I made it for breakfast.

To make it clear that this sandwich is very easy to eat, I took a picture. Nothing falls out and takes a big bite out of it!
