Today I want to treat you to sandwiches on rye bread with herring. The cottage cheese and veggies are the perfect accompaniment! The vegetables give juiciness, the herring is spicy, and the cottage cheese completes the harmony of flavors!

Ingredients for sandwiches with cottage cheese, herring and vegetables:

  • Bread (rye, rye-wheat, grain, Borodino) - 4 slices.
  • Cheese (I have 9% fat) - 100 g
  • Herring (filet, spicy salted) - 150..200 g
  • Cucumber - 4 slice.
  • Tomato - 4 slice.
  • Butter (to taste, grease bread)
  • Lemon juice (to taste) - 1 teaspoon
  • Greens (to your liking, I have a mix of dill, parsley and green onions)
  • Sour cream (or mayonnaise) - 1 tablespoon

How to cook sandwiches with cottage cheese, herring and vegetables step by step with photos

Necessary products.

Brush a thin layer of butter on both sides of the bread

Toast the bread slices on both sides in a hot pan until golden brown, or brown them in the oven.

Mix the cottage cheese well with sour cream and chopped greens (here dill and green onions). Taste and season with salt, black pepper, or any spices you like that go with the fish. I did not add anything, I had enough salt from the herring.

Cut the cucumber into slices. The tomato also sliced in circles if it is small, in my case - in semi-rings.

Cut the herring fillet into small cubes and pour lemon juice on it.

To assemble the sandwich: spread cottage cheese mixture on a slice of toasted bread (about 1 Tbsp. 1 Tbsp per slice)

Top with a slice of tomato and cucumber

Top with finely sliced herring.

Serve at once, sprinkling with your favorite herbs. That's it, the sandwiches are done! Enjoy, for good health!
