Ingredients for crostini with black lentils and goat cheese:

  • Lentils (black "Beluga" Mistral) - 1/3 glass
  • goat cheese (soft) - 100 g

  • Garlic - 2 clove
  • Greens (finely chopped (parsley, onion, dill)) - 2 tablespoon
  • Salt (to taste)
  • Black pepper (ground, to taste)
  • Bread (ciabatta)

How to cook crostini with black lentils and goat cheese step by step with photos

Pour cold 1:2 water over the lentils, bring to the boil and simmer over low heat for 15 minutes with the lid on.

Rinse them in a sieve, then rinse with cold water.

Mix well with olive oil and vinegar.

Mix the lentils with the oil and vinegar, season with salt and pepper to taste. Let stand for 15-20 minutes.

While the lentils are infusing, let's make bread. To be honest, I could not find ciabatta in our city, and we had no time to bake it, we were so eager to try these sandwiches. So I took a plain baguette, combining Italy and France in a friendly alliance ;) So, cut the bread into pieces and fry in a pan, without adding oil, until golden.

The cheese was very soft, so I just salted and peppered it, and added chopped parsley. If your cheese is thicker, just add cream or milk and whisk well. Now rub each slice of bread with garlic and place a layer of cheese on top.

Spread pickled lentils on top of the cheese.
