And so, my dears, the main ingredient in this appetizer is to enjoy the preparation. First, chop the zucchini into large cubes.

In a heated frying pan pour a little olive oil, and fry 2 cloves of garlic and thyme on it. This will set the stage for a nice bouquet of flavors.

When the garlic is golden, remove it and throw in the zucchini. Salt and stir; the oil and thyme should coat each cube.

Roughly chop onion (strips), bell peppers and tomatoes. Add onions to zucchini.

The zucchini should "give out their breath", you'll be sure to know when it happens! Then add tomatoes and bell peppers, salt, ground pepper, and provan herbs. Stir and poach with the lid on until the kitchen is filled with fragrant aromas!

Repeat the initial step in a second pan: "Pour a little olive oil in a hot pan and fry 2 cloves of garlic and thyme." Fry the croutons. It's better to have Italian ciabatta bread instead of the usual bread.

Boil a poached egg. Break an egg into a separate container.

Add 2 tablespoons of vinegar and salt to not boiling water. Using a whirlpool spoon, gently but quickly pour the egg into the middle of the whirlpool. Cook for two to three minutes. (The egg won't smell like vinegar, it just helps the egg whites hold their shape.)

Add coarsely chopped herbs, and 2 finely chopped garlic cloves to the skillet with the vegetables. Stir, remove pan from stove.

Place vegetables and poached egg on croutons. When you cut the egg, the yolk comes out and makes a great addition to bruschetta. You can sprinkle a little bit of cheese. Enjoy it. Enjoy!!
