But if it is cooked at home, from quality fresh products, it is not only tasty but also healthy! Juicy meat with a delicious sauce, freshly baked pita bread and vegetables with a salad will not leave anyone indifferent!

Ingredients for doner kebab at home:


Pita

  • Water - 220 ml
  • Yeast (or 1.5 tsp.l. dry) - 15 g
  • Sugar - 1 teaspoon
  • Salt - 1 teaspoon
  • Wheat flour / Flour - 400 g
  • Vegetable oil - 2 tablespoon

Sauce

  • Yogurt (Preferably thick) - 300 g
  • Salt - to taste
  • Black pepper - to taste
  • Greens (Dill, coriander, mint to your liking) - 1 bunch.
  • Garlic - to taste
  • Lemon juice - 3 tablespoon

Stuffing

  • Chicken fillet - 2 pcs
  • Yogurt - 250 g
  • Salt - to taste
  • Black pepper - to taste
  • Spices (I took 0,5 tsp.l. mint and Mediterranean herbs) - to taste
  • Salad leaves / Lettuce (You can shred cabbage.) - 1 bunch.
  • Tomato - 1 pc
  • Cucumber - 1 pc
  • Onion

How to cook doner kebab at home step by step with photos


First let's marinate the meat. Rinse fillet and cut into thin lengthwise strips. Take yogurt, add salt, pepper to taste, spices and mix. Pour the marinade over the filet until it is completely covered. We put the lid on and leave in the fridge for at least an hour to marinade the meat, so that it becomes juicy and tasty.

For the sauce, mix the yogurt, salt, pepper and herbs. The sauce is especially delicious with mint, if you don't have fresh mint take dried mint. Add minced garlic (add the amount according to your taste). Squeeze lemon juice, stir, cover with clingfilm and leave in the fridge to infuse, too.

Take an apple or a potato, cut it, so it is stable. We take a bamboo skewer for kebabs, or we can carve it out of a stick, stick it into the potatoes and spread the marinade on top, like for shawarma. Pour the rest of the marinade on top and send it to the oven. I baked at 150 degrees in convection mode, I always do this with chicken, use your oven as a guide.

Knead the dough for the pita. Add sugar and crumble the yeast into the warm water and stir. Pour salt into sifted flour, stir, make a well, pour in the liquid and knead the dough. At the end of kneading add butter. Knead the dough well, for about five minutes. Grease a bowl with butter, spread out the dough, cover and leave to rise for one hour.

When the dough has risen, divide it into 8 equal parts. Roll out each piece to a patty about 10 cm in diameter. After unrolling the first four, place them on a baking tray lined with parchment paper and place it in a preheated 270oC oven for 5-8 minutes. They should puff up nicely. While the first ones are baking, shape the next four.

When ready slice the meat into small pieces with a sharp knife, just like a shawarma vendor would do.

When the tortillas are ready, all that's left is to form our doner kebab. Cut the pita in half, it's hollow inside with a cavity that's perfect for stuffing. We put in turns lettuce or cabbage, meat, gravy, pickled onions, tomato, cucumber, gravy, onions. You can do it as you like, adding or changing ingredients. It turns out very tasty and juicy, I highly recommend to try it. Bon appetit!
