Eagle Eye Sandwich

I got the idea from A. Orlovsky's cookbook.
Beautiful title.
Delicious, hearty, simple.
Good for a buffet table.
Ingredients for sandwich "eagle eye":

Bread
(white)
-
Chicken egg
-
Sprat
-
Tomato
-
Butter
-
Red caviar
(I replaced it with olive oil)
How to cook sandwich "eagle eye" step by step with photos

Slice white bread and fry on one side on
olive oil.with butter until crispy.

Place in a dish. |

Wash the sprat, remove the head and vertebral bones and flatten it.
Place on the fried side of the bread. |
|
Cut the tomato into circles and place on top. |
|
Cut the egg lengthwise. Crush the egg yolk with a fork, mix with the sauce and fill the egg whites halves with it. Put the caviar in the center. I replaced it with olives. |
