  • Baton (sliced) - 4.
  • Eggplant - 1
  • Tomato - 2
  • Chicken egg - 1
  • Milk - 20
  • Olive oil (for frying)
  • Hard cheese (to taste) - 100
  • Greens (for decoration)
  • Salt (to taste)
  • Black pepper (to taste)

How to cook eggplant croutons step by step with photos


We need the following ingredients

Cut French bread (I have a ready-made sliced bread) into pieces about 1 cm thick, cut eggplant and tomato into slices.

Beat eggs, add salt and pepper (to taste), milk. Dip pieces of dough in batter and fry on both sides.

Fry eggplants.

Drain baguettes and eggplants on a napkin (to drain off excess fat).

Spread tomatoes on the croutons, then eggplants and grated cheese.

Bake the croutons in the oven at 200*c until the cheese melts. Decorate with greens.
