Ingredients for grilled eggplant sandwiches:


  • Cottage cheese - 80 g
  • Vegetable oil - 1 tablespoon
  • Yogurt (unsweetened or sour cream) - 2 teaspoon
  • Sun-dried tomatoes (dried) - 3 pcs
  • Garlic (optional, can be without it) - 1 clove
  • Green onions (3 quills) - 1 bunch.
  • Tomato - 1 pc
  • Parmesan (or other cheese) - to taste
  • Eggplant - 1 pc
  • Bread (toasted) - 6 slices.

How to cook grilled eggplant sandwiches step by step with photos


Place cottage cheese, yogurt, sun-dried tomatoes and garlic in the bowl of a blender. Beat until smooth.

Slice eggplants into slices. Fry on a grill pan with oil (you can do it in a regular pan, and then put it on paper towels to get rid of the excess oil).)

Slice toaster bread into corners. Spread thinly and cover with cottage cheese sauce. Then put eggplant on top and mash it with a fork.

Pour cottage cheese sauce on top.

Then put chopped tomatoes on top. Season with salt and pepper and sprinkle with greens. Sprinkle with grated cheese if desired.
