Really fast hot sandwiches. Baked in the microwave. So if you can, don't hesitate to make these delicious sandwiches. They can also be baked in the oven, but the cooking time will increase. Because of the presence of mushrooms in the recipe, it is not advisable to give these sandwiches to children under 6 years of age. Although, it does not apply to such mushrooms as oyster mushrooms and shampignons, they are added in very small quantities to children's food from 1.5 years. Here already to decide for yourself. The solution is to make it for them without mushrooms.

Ingredients for hot sandwiches with mushrooms and tomatoes:


  • Baguette (from yesterday) - 1 pc
  • Champignons - 120 g
  • Tomato - 4 pcs
  • Hard cheese - 40 g
  • Soy sauce (TM Kikkoman light) - 1.5 tablespoon
  • Mayonnaise (butter) - 1 tablespoon
  • Greens - 3 sprigs.
  • Black pepper (freshly ground) - 0.5 teaspoon

How to cook mushroom and tomato sandwiches step by step with photos


Slice baguette into 1 cm thick slices. I cut 8 pieces, 2 sandwiches apiece.

Rinse the mushrooms quickly under running water in a colander, pat dry with a paper towel. Peel the skins. The mushrooms have to be completely fresh, make sure they are well seasoned.

Remove the feet, they can be used for frying in another dish, freeze them. We need the caps, so slice them into strips.

Pour boiling water over the sliced mushrooms for 30 seconds. Drain them in a colander. From the steam, they'll dry out a little bit. I have a bowl and a colander, very convenient, two in one.

After a couple of minutes, once the mushrooms have slightly dried in the colander, transfer them to a bowl and pour 1 tablespoon of soy sauce TM Kikkoman-light, set aside.

Assemble our sandwiches. Brush a thin layer of mayonnaise or butter on the slices of baguette. Slice the tomatoes into thin slices and arrange on top. Tomatoes are good for this type of tomato "cream", They have less juice. Using a brush and dab the tomatoes with Kikkoman soy sauce from the bowl used for marinating mushrooms.

Spread mushrooms marinated in Kikkoman soy sauce on top of the tomatoes.

Chop any herbs you like and place them on top of the mushrooms.

Grate cheese on a medium grater, arrange a top layer and put in the microwave for 2-3 minutes until the cheese melts. I had 750 watt power, it took 3 minutes.

After taking the sandwiches out of the oven, sprinkle the remaining Kikkoman soy sauce on top. Sprinkle with freshly ground pepper from the grinder and serve. Bon appetit!
