Today I bring to your attention a wonderful appetizer. Tender fish and caramelized onions on crispy bread, all served with a delicate salad. It takes very little time to prepare, and the result is perfect!.

Ingredients for hot salmon sandwiches:


Sandwiches

  • White Onions (Large onions, you can use regular onions or red onions) - 3 pcs
  • Salmon (raw) - 12 slices.
  • Bread (for toasting, or other to your taste, but sweet is better) - 6 slices.
  • Laurel leaf - 4
  • Olive oil
  • Salt
  • White pepper
  • Soy sauce (Kikkoman Sukiyaki soy sauce for frying) - 4 tablespoon
  • Honey (liquid) - 2 teaspoon
  • Dill (as desired)

Salad dressing

  • Grape seed oil - 100 ml
  • Cream (heavy, or yogurt) - 100 ml
  • Mustard (Dijon) - 2 teaspoon
  • Lemon (freshly squeezed lemon juice) - 1/2 Piece

Lettuce

  • Lettuce leaves / Lettuce (Corn, arugula, mixed, or something light to your taste, one large bunch per sandwich) - 6 bundles.

How to cook hot salmon sandwiches step by step with photos


So first things first, let's make the onion dressing. We slice the onions into half rings and sauté them in olive oil with the bay leaf for about 10 minutes.

Then we add the soy sauce. Kikkoman Sukiyaki soy sauce has a sweetish taste on its own, but for better caramelization and an even spicier flavor, we add a little honey.

You end up with these amazing onions. Very tasty!

Now let's make a wonderful salad dressing by whipping cream or yogurt with mustard and lemon juice and mixing with grape seed oil. It gives the dressing a nice green hue.) But it doesn't have a very bright taste on its own. If you're going to use this dressing on its own in a salad, it's better to add extra salt or balsamic. And we just mix the dressing with the salad (I had arugula).

We take salmon filet and cut it into thin slices. The amount will depend on the size of the filet, the size of the bread and your skill)) I had about 2 slices per sandwich.

Turn on the grill in the oven at 200 degrees (if you do not have a grill, you can just preheat to 200 degrees and put the sandwiches up higher), and while it heats up on a grill pan or regular fry the bread on one side.

Now assemble the sandwiches. Place onions on the unbaked side of the bread...

... Gently cover everything with fish, a little salt and white pepper, then a sprig of dill and put it in the oven for 3-7 minutes. DO NOT OVERCOOK! The slices are thin, the fish cooks very quickly.
