I first tried these wonderful and original sandwiches when I was a guest of my cousin Galina, in the Bryansk region, village of Ryabtsy. Now that village no longer exists... It remains only in our memory. But every time I make these sandwiches I remember that summer in Ryabtsy... The recipe is absolutely easy, but the sandwiches are delicious!
Ingredients for Hot Sandwiches "from Galina":
- Potatoes (medium) - 2 pcs
- Hard cheese - 50 g
- Chicken egg - 1 pc
- Green onions - 1 bunch.
- Vegetable oil - 2 tablespoon
- Bread - 5 slices.
How to cook hot sandwiches "from Galina" step by step with photos
So, wash and peel the potatoes, grate them on a coarse grater and mix with the egg. Grate the cheese on a coarse grater and add to the potatoes. Add chopped onions and mix well. It is not necessary to salt, because the cheese itself is salty and this is enough. But if you want, you can add any seasonings and spices you like. Of course I didn't add a bunch of onions, but just a few pips. Again, to taste.
Prepare the slices of bread. The bread can be absolutely any kind. The main thing is that it must not be too soft and thin, it must not crumble and hold its shape well.
Spread the filling on the bread, flatten it and press it a little with a spoon.
We put the bread on a dry, slightly warmed pan and cover it. I have a stone-coated pan, I love it! You can use it with little or no oil and nothing will stick. After a minute and a half to two minutes or so the bottom rim of the bread is lightly toasted, so it's time to flip it!
Carefully turn the sandwiches and add a tablespoon or two of butter. Put the lid back on. And we toast the sandwiches until they're crispy.
