For the bread

  • Bread (I have rye, any kind) - 2 slices.
  • Garlic - 2 clove
  • Cream cheese (Hochland creamy melted) - 2 tablespoon

For sandwich

  • Olive oil - 1 tablespoon
  • Red onion - 0.25 pcs
  • Sweet pepper (I have yellow) - 0.25 pcs
  • Tomato (better to take a fleshy one) - 0.5 pcs
  • Zucchini (~50 g) - 0.25 pieces
  • Thyme - 0.25 teaspoon
  • Rosemary - 0.25 teaspoon
  • Basil - 0.25 teaspoon
  • Salt (to taste) - 1 pinch.

Optional

  • Sweet paprika (to taste) - 0.25 teaspoon
  • Chicken egg (optional, optional) - 2 pcs

How to cook Italian Bruschetta sandwiches step by step with photos


Make the vegetables for the sandwich. Finely chop onions and peppers in half wedges. If you have a juicy tomato, remove the center and finely dice the fleshy part. The zucchini is also cut into half-slices, put into a bowl and add all the spices and 0,5 tbsp of olive oil. Stir it up . Warm a saucepan, pour out the remaining oil and add onion. Fry them until soft and add zucchini, cook them for a minute and then add bell peppers and tomato. Stir and make al dente. You don't want them to boil. Cooking time for the vegetables is about 10 minutes. At the end we salt them to taste and take them off the heat.

I cut 2 slices from the rye bread and toast it in a toaster. If you do not have a toaster, toast the slices in a dry pan. You can have any kind of bread. Immediately rubbed each slice with a slice of garlic. Rub one clove on each slice. I spread Hochland cream cheese on top. Eggs can be cooked any way you want for sandwiches. I fry them in a pan that can be fried without oil. Eggs can be poached, poached, or poached.
