Lard always tastes good to me! I think it's good for a lot of people, too. I have a little piece of salted lard every morning with an egg. It's great for the immune system, which we need right now in the spring. The main thing is to eat just enough lard. Today I decided to make a healthy lunch sandwich out of bacon.

I'm going to use rye breads for the sandwiches. Spread mustard on the bread. I put Dijon mustard, it's not so "as mean".

I'll finely chop the celery leaves. I sprinkle the mustard with the celery and put cherry tomatoes on top, cut into 4 slices. Just enough to fit on the bread. You can have a regular tomato. Slice the lard thinly into slices. Number of slices as many as will fit on the bread. I fit 3 slices each. If the skin is coarse, cut it off. Season with freshly ground black pepper if desired. If you make this sandwich as an appetizer, put a layer of garlic in front of the tomato or between the tomato and the lard.

The sandwiches are done!

I made them for breakfast and cooked the frosting without butter (my skillet lets me). Good Morning! Good morning to you all!
