Ingredients for the mushroom and egg sandwiches:


  • Bread (whatever you like, I have a loaf) - 2 slices.
  • Chicken egg (boiled, depending on size) - 2 pcs
  • Butter (grease the bread) - to taste
  • Mustard - 0.5 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Greens (any) - to taste
  • Spices (Marjoram and cumin, if desired) - 2 pinch.
  • Lemon juice - 1 teaspoon
  • Mayonnaise - 1 tablespoon
  • Mushrooms (I have mushrooms, you can take pickled mushrooms, 1 tbsp each.l. per serving) - 4 pcs

How to cook mushroom and egg sandwiches step by step with photos


Here are the basics you need.

Cut slices of dough crosswise to make 4 sandwich bases. If you think it's too small for one serving, make it from the whole loaf. Brush both sides with a thin layer of butter

Fry the slices on a hot griddle until golden brown. Remove and cool on a rack so that it does not get stale.

Chop the mushrooms finely. Do the same with the pickled ones, if you want to use them.

Fry the mushrooms in 1 tablespoon of oil, season with salt and pepper to taste. I also add marjoram and cumin to fresh mushrooms, these spices work well with mushrooms. Fry until lightly gilded, then cool.

Boil eggs in advance, cut into circles

Next, select the yolk, leaving the rings of whites intact.

Add mustard, mayonnaise and lemon juice to the yolks and knead well until smooth.

Add cooled mushrooms to the egg yolk mass, mix, season with salt.

To assemble the sandwich: put two squirrel rings on each slice of toasted loaf and fill with mushroom mixture - 1 teaspoon with a slide.

Before serving, sprinkle with your favorite chopped greens. Our sandwiches are ready! Help yourself!
