Nostalgia Sandwiches

My mom used to make these sandwiches for us back in the 90s, when we had no money and really wanted to eat them. Now we have enough delicacies and the opportunity to try them, but these sandwiches are still my favorite - with the taste of childhood, the aroma of family warmth and comfort. Thank you Alsou (the cook alsunchik) for the support and thanks to her, I decided to move the recipe from the diaries to the home page.

How to cook sandwiches "nostalgia" step by step with photos
Slice bread (you can make it a loaf, I have homemade bread) into slices about 1 cm thick. Dip each slice in milk (or water) with one side and put it on a baking pan (you don't have to grease it). |
Each piece smear ketchup (you can take any other, your favorite tomato sauce, my mom just smeared tomato juice) |
Pass the boiled chicken through the meat grinder. You can take any other meat, for example my husband does not eat goose or duck, but in these sandwiches he gobbles up for good measure, but in this case I grind the raw meat into minced meat and then roast until tender. |
Peel the onion, chop it finely, and fry it in a little vegetable oil until it turns golden. |
Add onion to minced meat, salt, pepper to taste and mix well. You may not fry the onions separately, but fry them together with the stuffing. After stirring, you can add 1 tablespoon of sour cream and knead again (this is so that the mass becomes more cohesive, if you do not add sour cream, the stuffing will be a bit crumbly and it will be harder to put it on the bread) |
Put stuffing on each slice of bread and flatten it. Pop the sandwiches in a preheated 170 degrees oven until the bread is lightly browned. |
While the sandwiches are baking, boil the eggs;
Then slice the eggs into about 0.5 cm thick slices lengthwise. Slice the pickles lengthways into strips about 0.3 cm thick. |
Lay 2 cucumber strips and 2 or 3 egg slices on the sandwiches. If desired, you can coat the sandwiches with mayonnaise, and then lay the eggs and cucumbers. These sandwiches are good both hot and cold.
Bon appétit. |
