I don't know about you, but for me the holiday begins with uncorking a bottle of good wine. And you're never going to find a better accompaniment to a glass of bastardo than an olive and cheese. That's why Italians invented olive crostini, slices of baked bread with cheese and olives. They come out crunchy, but very soft and tender. It is a wonderful snack for Women's Day :-)

Ingredients for the olive crostini:

  • Baguette - 1 pc
  • Olives - 0,5 jar.
  • Green olives (with red bell bell pepper) - 0,5 jar.
  • Hard cheese - 100 g
  • Soft cheese (like Gouda) - 100 g
  • Cream cheese - 100 g
  • Butter - 1-2 tablespoon
  • Olive oil - 1-2 tablespoon
  • Capers - 3 pcs
  • Garlic - 3 clove
  • Greens - 0.5 bunch.

How to cook olive crostini step by step with photos

It is best to buy the baguette in advance. It's less crumbly and easier to slice on the second day. You can use any type of cheese - it's just the combination of soft and hard varieties that matters. I used a slice of gouda, rassica, parmesan and a spoonful of cream cheese.

I crushed the olives in a food processor. Finely chop the garlic and capers with a knife. Grate the cheese on a fine grater. Then we add butter and cream cheese to all the chopped pieces, add a little olive oil and stir until it becomes a paste. Cut the baguette into oblong slices (obliquely) and spread the olive-cheese mixture on each slice.

Put the slices on a baking tray and bake in the oven at 180 degrees for about 15 minutes until golden brown.

Makes about 25 pieces, just right for a small company :-)
