This hot two-cheese appetizer with a complex flavor calls for an equally complex drink, such as Port, Marsala, Madera or other red fortified wine. Ingredients for parmesan and blue cheese toast:

  • Parmesan (grated) - 1 glass
  • Blue Cheese - 1/2 glass
  • Mayonnaise - 1/2 glass
  • Toast (or French baguette) - 1 package.
  • Green onions - 1 bunch.
  • Garlic - 1 clove
  • Olive oil - to taste
  • Cayenne pepper - to taste
  • Black pepper (freshly ground) - to taste

How to cook toast with parmesan and blue cheese step by step with photos

Combine the parmesan and crumbled blue cheese in a bowl.

Add crushed garlic, mayonnaise and pepper and mix until smooth.

The toast bread can be cut diagonally into triangles or you can cut a baguette. Brush each slice with olive oil. I grilled the toast, starting on the buttery side until brown and characteristic streaks. Optionally, the toast can be baked in the oven.

Spread cheese mixture on the toasted toasts and send to the hot oven until the cheese is melted.

Serve the hot toast immediately, sprinkled with green onions. Guests at table, fortified wine in glasses)
