The base of this bright, delicious garlicky bruschetta is flavorful pumpkin butter, which is, however, very easy to make! The rest of the ingredients can be chosen according to your taste; for me it is marinated and fried chicken breast, feta cheese and greens!

Ingredients for bruschetta with pumpkin butter:

  • Pumpkin - 400 g
  • Chicken breast - 1 pc
  • Feta - 1 tablepoon
  • Greens - 1 handful.
  • Baguette - 1 pc
  • Red onion - 1 pc
  • Garlic - 1 clove
  • Allspice (ground) - 1 pinch.
  • Garlic powder - 1 teaspoon
  • Red Hot Pepper - to taste
  • Vinegar (apple) - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Honey - 0.5 teaspoon
  • Salt - to taste
  • Butter - 100 g

How to cook pumpkin butter bruschetta step by step with photos

Peel the pumpkin, remove the seeds and skin, cook in any way you like - bake, steam, or boil (I cooked in the pumpkin maker for 15 minutes, quick and easy) Remove and cool.

Mix olive oil with vinegar and honey, salt to taste, pour the chicken breast, rub the marinade into it and leave for 10-15 minutes. Pan fry chicken breast, turning over until tender (about 10 minutes, don't overcook it)

Mash the pumpkin with a fork, add the room temperature butter, garlic powder, red and chili pepper, salt to taste, beat with a blender and chill in the refrigerator for 30 minutes.

Slice the baguette lengthways, toast in a toaster and rub with garlic.

Spread pumpkin butter on the baguette, arrange the greens (I have rucola, Swiss chard, whatever), then the onion in thin rings, then the slices of breast and some crumbled feta. Very, very tasty!
