Ingredients for crostini with pumpkin:


  • Baguette - 1 pc
  • Pumpkin - 300 g
  • Carrots (medium) - 1 pc
  • Onion (medium) - 1 pc
  • Garlic - 2-3 clove
  • Tomato paste - 1 tablespoon
  • Water - 100 ml
  • Salt (to taste)
  • Spices (to taste)
  • Vegetable oil (for frying)

How to cook pumpkin crostini step by step with photos


First we have the pumpkin. I used a pickled one, so I just fried it a bit. If you are using a fresh pumpkin, you have to slice it into small cubes and fry in vegetable oil until tender (over medium heat). When ready set the pumpkin aside.

Cut onion into small cubes, grate carrot on medium or coarse grater. Add onion and fry a few more minutes in a frying pan. Then add carrots and continue frying. Add the tomato, salt, black pepper and your favorite spices. I used ground red pepper, nutmeg and marjoram. Then add chopped garlic and water. Braise over medium heat until liquid evaporates. You can also add 1 tbsp.l. Wine or apple cider vinegar (I didn't do that, since my pumpkin is pickled)

Gently mix the pumpkin with the roasted vegetables.

Cut the baguette into slices, drizzle with oil and toast (or brown in the oven) until crispy. Then put the vegetables on them and serve. Appetizer is ready.
