Ingredients for egg and rampson sandwiches:


  • Chicken egg (hard-boiled) - 3 pcs
  • Turmeric (small, or green onion feathers, garlic shoots) - 1 bunch.
  • Parsley (or other greens) - 3 sprigs.
  • Sour cream (20%) - 2 tablespoon
  • Hollandaise cheese (grated) - 4 tablespoon
  • Bread (4-5 slices) - 4 slices.
  • Salt - to taste
  • Black pepper - to taste

How to cook egg and rampson sandwiches step by step with photos


Finely chop the ramekins and parsley, add the eggs, mashed with a fork, salt, pepper and half the grated cheese.

Add the sour cream and mix.

The mixture should be quite thick.

Line a baking tray with baking paper. Preheat the oven to 200°. Spread slices of bread on the tray, spread the egg mixture on them, put in the oven and bake for 3-5 minutes at most. The mass should not brown.

Take out of the oven, sprinkle the sandwiches with the remaining cheese and put back in the oven to melt the cheese.

Serve immediately.
