When I saw this recipe, I thought it would be a great combo. I was right. Crunchy slice of bread and tender fish and cheese mixture and a slice of fresh cucumber, very tasty. It's not a shame to serve this kind of appetizer on the holiday table. This recipe will definitely stick with me. These sandwiches can be made outdoors, as soon as the fish is smoked. You can prepare fish in advance and make an appetizer as needed.

  • Fish (vendace) - 1 unit
  • Seasoning (for fish from Forester) - 2 tablespoon
  • Baton - 0.5 pcs
  • Cheese curd (creamy) - 2 tablespoon
  • Cucumber - 1 pc
  • Dill - to taste
  • Butter (or vegetable) - 1 tablespoon

For this recipe I bought a fresh "vendace". It's the first time I've ever had that kind of fish. And I have to tell you, it's a great fish. Easy to peel. No small bones in it. Tender and very tasty. I recommend. Any white, not bony fish will do.

Clean and wash well.

Sprinkle a little seasoning on both sides and put a little bit of it on the belly.

Moisten a little of the wood chips for smoking. Put them on the bottom of the smokehouse. One piece of Forester's special wood chip is enough.

Install a tray to collect grease and juice, and a rack on top. Lay out the fish.

Smoke the fish for 15-18 minutes. The coals should burn well all the time.

This is how beautiful the fish is.

Remove fish from bones and skin.

Slice or shred it. I got about half the fish.

Mix the fish and the chopped dill in a bowl.

Add the cheese and mix well.

Cut the loaf and fry it in butter or vegetable oil on both sides.

Spread slices of bread with fish and cheese mixture.

Put cucumbers on top. Enjoy your meal.
