Spiced Pumpkin and Chicken Sandwiches

Ingredients for Spiced Pumpkin and Chicken Sandwiches:


For the chicken

  • Chicken filet - 200 g
  • Salt - 2 pinch.
  • Black pepper (freshly ground to taste)
  • Olive oil - 1 teaspoon

For pumpkin

  • Pumpkin (I have a nutmeg) - 100 g
  • Salt - 1 pinch.
  • Basil - 1 pinch.
  • Rosemary - 1 pinch.
  • Thyme - 1 pinch.
  • Olive oil - 1 tablespoon

For sandwiches

  • Breads (buckwheat "Generous") - 6 units
  • Mayonnaise (homemade, you can use any or mayonnaise sauce) - 6 tablespoon
  • Green onions (chopped) - 1 tablespoon
  • Black pepper (to taste and taste)

How to cook Spiced Pumpkin and Chicken Sandwiches step by step with photos


I opened up the last pumpkin today. My pumpkin is nutmeg. For the sandwiches I took a slice of 100g. I cut it into thin slices. I put it in a dish, salted it, sprinkled with thyme, rosemary and basil, drizzled with olive oil and stirred. I put it on a baking sheet and put it in the oven to bake. Baked the pumpkin slices for about 15 minutes. I sliced the chicken filet thinly, about the length of the bread. With the blunt side of the knife I pounded it on both sides, but not too hard.

I put the fillet on the grill pan, greasing it up a bit "the ribs". I fried literally a couple of minutes on each side, sprinkling the sides with salt and freshly ground black pepper. For sandwiches I will use buckwheat breads "Generous". I spread homemade mayonnaise on the bread. If you're interested in how I make it, I'll give you a link to the recipe below! You can use any mayonnaise or mayonnaise sauce. Spread grilled chicken on top and topped it with a couple of slices of baked spiced pumpkin. Sprinkle green onions on top.

Served the sandwiches immediately warm with a fried egg (no butter). I sprinkled some freshly ground black pepper on top of the sandwiches.

That was my breakfast.
