Mayonnaise

  • Green peas (take 100 ml of liquid alone) - 1 jar.
  • Mustard (table, to taste) - 1 teaspoon
  • Lemon juice - 1 teaspoon
  • Sugar (to taste) - 1 teaspoon
  • Salt (to taste) - 0.5 teaspoon
  • Sunflower oil (refined) - 300 ml

Sandwiches

  • Breads ("Generous" rye) - 3 pcs
  • Mayonnaise (homemade mayonnaise, you can take store-bought or sour cream) - 3 tablespoon
  • Radish - 3 pcs
  • Green onions (feather) - 1 pc
  • Parsley - 1 twig.
  • Salt (sea salt) - 1 pinch.
  • Black pepper (freshly ground) - 1 pinch.

How to cook sandwiches "spring mood" step by step with photos


Since it's Lent, I'm going to make a Lenten homemade mayonnaise with green pea liquid. From the amount of ingredients I listed, I would have almost a half-liter jar of mayonnaise, which I will use not only for these sandwiches. Pour the liquid from under the green peas into a jar, add mustard, salt, sugar, lemon juice and whip with an immersion blender. Add sunflower oil in a thin stream, whisking constantly with "up and down ". Whisk until it reaches a thick consistency. I got 300 ml of oil. Adjust salt, sugar and mustard to your taste. I'm okay with the amount of ingredients I gave in the recipe.

I'll make sandwiches on bread "Generous" rye.

Put mayonnaise on the bread. I had about 1 tbsp of mayonnaise on one. Spread it all over the bread.

Spread thinly sliced radish slices on the mayonnaise. One radish per sandwich. Sprinkle chopped green onions and parsley on top. Salt the top with sea salt (any salt) and pepper to taste with freshly ground black pepper.

Serve. MMMMMMMMMMMMMM... tasty, fresh, juicy!
