For the toasted pancakes

  • Potatoes (medium size) - 3 pcs
  • Onions (small onion) - 1 pc
  • Wholemeal flour (no topping, can be replaced with potato starch) - 1 tablespoon
  • Olive oil (or sunflower) - 2 tablespoon
  • Salt (to taste)
  • Black pepper (to taste)

For toast

  • Cheese cheese
  • Cucumber
  • Salad leaves / Salad

For scrambled eggs

  • Chicken egg - 1 pc
  • Milk (goat) - 1 tablespoon
  • Salt (to taste)

How to cook toast with brynza on pancakes step by step with photos

Making potato pancakes. Peel, wash and dry potatoes with paper towel.

To prevent the potatoes from getting blackened by the metal grater, I always grate the onions first. Then grate the potatoes with the onions. I grate right into the container where we will mix the base for the potato dumplings. I use a medium sized hole in the grater. Salt and pepper. Stir with a wooden spoon.

There are no eggs in the drewniki and I always use potato starch. I didn't have any today so I replaced the starch with whole wheat flour. I joined everything together thoroughly using the same wooden spoon.

I use a pancake pan to bake the pancakes. I poured olive oil, which can be replaced by sunflower oil. It tastes better with olive oil! I heated it well and spooned out the potato dumplings. I have a pan with a D of 24 cm. I made large in diameter and quite thin, so that they would be a little crispy. So I spread them out neatly with a spoon in a ~1 cm layer. I had 3 pancakes in the pan. And there were only 6 pieces. 2 per piece. That's enough for us. I fried them twice, pouring a tablespoon of oil each time. Fry the pancakes on high heat until they have a nice crispy crust on one side...

... Turn the potatoes over and finish frying on high heat. The doughnuts are thin and fried very fast.

Remove on a paper towel to get rid of excess oil.

For breakfast I make scrambled eggs in microwave for 55 seconds at 800W power. I have a great tool for scrambled eggs in the microwave. It holds one egg and one tablespoon of milk. I salt to taste and stir with a fork. I'm just sharing with you. You can make an omelet the way you want or just boil some hard-boiled or hard-boiled eggs.

Putting the toast together. We take the plate that we're going to serve breakfast in. I made an omelet. That's how pretty it looks. Lay out the pancakes. Slice the cucumbers and bryndza thinly to the size appropriate for the dumplings.

Lay a slice of lettuce on top of the dried cheese, then a cucumber slice, and put bryndza cheese on the cucumber - it's a wonderful combination!
