Welsh Rabbit

Welsh rabbit - as the name of this dish sounds in English. The history of this name is strange, confusing and almost detective. The thing is, there's no rabbit at all, there's bread and cheese.. and, well, spices. Apparently, the name was born in the days and the recipe is over 200 years old when poor Welsh rarely got meat, especially rabbit meat. Croutons with cheese were hearty and tasty, so the Welsh, with a pinch of irony, named the dish 'rabbit'. Welsh or Welsh, whichever you prefer. It is not a statement, there are other versions, but this intriguing name gives to croutons a mysterious touch and makes them look mysteriously delicious.

Prepare the products. I use butter "EcoMilk", with a lovely creamy flavor. Had to make some substitutions, about which below. |

Mix the egg yolk with mustard, Worcester sauce and pepper.
I couldn't find any Worcester sauce on sale, no matter how hard I searched. I googled what I could replace it with. Well, nothing at all. None of the suggestions were satisfactory. I decided that narsharab was the closest. That's what I used. |

Pour in the beer, mix well. |

Pour in the cheese chopped in small pieces. Then put it on the fire over a medium heat, stirring until the cheese has dissolved and the sauce has thickened. Cool slightly.
Didn't work with the cheese either. I've knocked myself out, but I can't find cheddar in any supermarket. It says hard cheese. Don't believe your eyes. You need semi-hard cheese for this dish, but it's not on the ingredient list. You have to think that the cheese should melt well. I used semi-hard Russian cream cheese. д. ж. 50% "Pride of the Empire" I didn't get it right; I couldn't get a completely uniform texture of the sauce, even though the cheese felt soft to the touch. |

Cut the bread into slices and brown in a toaster. Spread butter on the hot slices. |

Cover them with a thick layer of sauce |

Bake under a high flame or grill in the oven until golden brown. |
