Consomme is a wonderfully tasty broth! The main feature of consommé is its transparency! Broth is cooked on low heat. In essence, consommé is a twice-cooked rich, beautifully colored broth. Consomme is cooked both from chicken and beef. It's a universal dish, in my opinion. Broth can be varied with different additives (meat products, vegetables, small pasta, etc.) and frozen for future use.), you can freeze it and add it to other dishes. I like it very much! I just so happened to remember this recipe today. I first made this broth about 10 years ago, the first time I ever got the flu. The most important thing in making this broth is the chicken. It must be homemade, which is not bred for meat, but the most real "running chicken". That's what they were called. The meat was tough and without all the additives that they put in the broilers. I'll give you the recipe for a whole chicken. I had a quarter of one at home, but that didn't stop me from making broth. Make it smaller.
