Ingredients for Bean Soup with Mushroom Dumplings

  • Broth (meat or vegetable) - 2,5 l
  • Onions - 1 pc
  • Carrots - 1 piece
  • Potatoes (small) - 2 pcs
  • Beans - 1 glass
  • Mushrooms ( champignons ) - 100 g
  • Chicken egg - 1 pc
  • Wheat flour / Flour - 4 tablespoon
  • Salt
  • Black pepper
  • Greens

How to cook bean soup with mushroom dumplings step by step with photos

Prepare gnocchi. Boil the mushrooms for 5-7 minutes.

Then chop the mushrooms in a blender until they become a paste. Then add eggs, flour and salt. Add some greens. The batter should be as thick as sour cream. I used 4 tablespoon of flour, but it's different.

Cook the soup. Soak beans in water for a few hours beforehand. Then we throw them in the broth and simmer until they are almost cooked. Cut potatoes and add them to the soup. Then finely chop carrots and onions, fry them in a frying pan, add them to the soup and bring to readiness. Salt and pepper it. Drop the gnocchi into the boiling soup with a teaspoon. When they float it's ready.
