Ingredients for soup with beets and barley:


  • Chicken breast - 1 / 2 pcs
  • Chicken (smoked, any parts for broth)
  • Pearl groats (1 cooker) - 100 g
  • Beets - 500 g
  • Lemon juice (juice of half a lemon) - 1/2 pc
  • Mushrooms - 150 g
  • Onions - 1 pc
  • Carrots - 1 pc
  • Sweet pepper - 1/2 Piece
  • Tomato paste - 1 teaspoon
  • Green onions (any greens)
  • Garlic - 3 clove

How to cook soup with beets and pearl millet step by step with photos


Rinse and grate beets and put them in a frying pan on medium heat. Add the juice of half a lemon. Braise for an hour, if necessary add some water.

Boil some broth. Simultaneously boil barley groats (I took in a bottle, it's more convenient and boils faster), you can add it immediately to the boiling broth and cook with the chicken.

Clean the mushrooms. I, for this kind of soups, take very small mushrooms, so as not to have to cut them, they are much tastier. Put them in a dry (!) pan over medium heat. Stir until there is some juice, then turn down the heat and cook in their own juice. I don't add any oil, I like it very much "pure" mushroom flavor.

Fry onion and carrot until almost cooked, add bell peppers, after a few minutes...

Add tomato paste, stew for another 5 minutes.

Take chicken out of broth, separate the meat and put it back. Add barley groats (if you cooked them separately), stuffing.

In the same way we send chopped green onions, mushrooms, beets and finely chopped garlic to the pot, and leave to simmer for 10 minutes.
