Ingredients for soup with chicken liver and buckwheat


  • Chicken liver - 300 g
  • Buckwheat grits - 1/4 glass
  • Onions - 1 pc
  • Carrots - 1 pc
  • Tomato - 1 pc
  • Sweet pepper (optional) - 1/2 Piece
  • Olive oil - 2 tablespoon
  • Wheat flour / Flour - 2 tablespoon
  • Black pepper (peas) - 6 pcs
  • Salt (to taste) - 1 teaspoon
  • Green onions (feather, to serve, optional) - 3 pcs

How to cook soup with chicken liver and buckwheat step by step with photos


Let's get all what we need for the soup. Put 1.5 l of water on the stove. You can use any other broth: chicken, meat broth. Bring it to the boil and put a handful of buckwheat in it. Cook it for 5 minutes and put the vegetables. Chop onion and 1/2 of carrot into pieces at random. Fry onion well, I did not do it. Pepper cut in julienne. If you do not like peppers in soups, you can skip them. We add them all at once to the buckwheat.

Scald the tomato in boiling water, cut it crosswise, and peel it. Grate second part of carrot.

Finely dice the tomato. Grate carrot and tomato and put them into a pan. Cook the vegetables and buckwheat for about 10 minutes. Salt to taste.

Wash liver, dry with paper towel, cut into pieces (as you like) and roll in flour.

Pour olive oil in saucepan and put liver in it. Fry a little.

Put them in a pot and simmer for about 15 minutes.

We put pepper, bay-leaf and add a bit more olive oil if you wish, then we taste it for salt.

We remove from heat, allow to stand for a while and pour onto plates. Add chopped chives and we pepper it as we wish.
